No Bake Cookie Protein Bites

Hi guys!

So we just made the most delicious protein balls that taste like a healthy no-bake cookie. They’re so good you may want to double the recipe so you’ll have some leftover after you eat ten in one sitting. I’m not saying that’s what we did, but…

Anyway, they are SO easy to make. They take about 10 minutes to mix all the ingredients together, pop them in the fridge for a bit, and they’re done.

They’re vegan, gluten free, and full of protein.

You’ll seriously thank yourself for making these!

Ingredients:  

  • 3 Tbsp Chia Seeds

  • 1 C Chopped Walnuts

  • ½ C Pumpkin Seeds

  • 1 C Natural Peanut Butter

  • ¼ C Maple Syrup

  • 2 Scoops Plant Based Protein Powder

             (We used Orgain Chocolate Fudge)

 

Instructions:

  • First, soak the chia seeds in 4 Tbsp of water for about 10 minutes until they have a jelly like substance

  • While those are soaking, chop the walnuts in a food processor into smaller pieces.

  • In a bowl, combine the chopped walnuts and the pumpkin seeds

  • In a separate bowl, mix the chia seeds, peanut butter, maple syrup, and protein powder. Mix completely until it’s a paste texture.

  • Add the walnuts and pumpkin seeds into the wet mixture

  • Blend for two minutes

  • Roll the dough into 25 1” balls and refrigerate

 

Done! Now you have a healthy but sweet snack for the week.
